Quick and easy stir fry vegetable rolls

Yet another quick easy and yummy recipe on the go, apt for snacks, picnic, munchies or meal by itself.

Stir Fry vegetable rolls

Recipe for 4 rolls


For the stir fried veggies

1 big onion finely sliced
1 big capsicum finely sliced
1/2 cup sweet corn
1/2 cup green peas
Oregano to taste
Salt to taste
Pepper to taste
2-3 tspn oil
1/2 cup shredded boiled chicken (for non vegetarians)

For the stuffing
Shredded cabbage
Egg less mayo
4 cheese slices
Liquid cheese
4 chapatis

Method for stir frying the veggies

Take a pan, add oil and then add sliced onion, let it caramelise add all the other veggies and fry them till they are done. Season with oregano, salt and pepper. Keep it aside

Take a chapati. Add cheese slice over it and microwave it for 30 seconds, add some shredded cabbage over it, then add a spoonful or more of stir fried veggies prep. Add a dash of Mayo and some liquid cheese, roll it over and your yummy rolls are ready in no time.

You can serve it with milkshake or coffee. Or alongside some soup. Or just enjoy it the way it is. A wholesome meal.
