Spaghetti Aglio E Olio : Recipe



Its a lazy weekend in bed, woke up late and have to make a meal for one to satiate my  growling tummy.
I am very lazy and still want yummy food ( story always ).
so whipping up some classic Aglio E Olio spaghetti.
Its a 5 ingredients dish very simple and easy.

All you need
Olive oil
Spaghetti boiled (according to package instructions)
Garlic sliced
Parsley finely chopped ( I used coriander )
Parmesan grated ( I used cheddar mozzarella mixture instead )
apart from this I have sprinkled some salt, fresh ground pepper, chilli flakes and used some black tinned olives and sun dried tomatoes that I had in my fridge.

Lets get started.
Heat oil in a pan on low heat add the breadth wise diced garlic and let the oil infuse it all on a very low flame till golden brown, add chilli flakes and let it be for a minute. switch off the heat.
Add all other ingredients and mix nicely and its readdddy..
Total Yumzaa.

How to make easy Chicken Shwarma /Pita Pocket/ Gyro Recipe

So this is what I cooked today with the ingredients available in my kitchen. 
A cross between chicken shwarma  and a gyro. A beautiful pita pocket which was healthy and sumptuous and did I forget utterly tasty. 
The entire recipe is on the vlog right from the hummus made from scratch to this pretty creation... and it's surprisingly very easy ... check it out

Easy Veg Cutlets

Firstly I am so sorry for being away from all you guys for so long. The weather was playing up and I had an active dengue in the house with other viral and cold and coughs making their presence felt as well. Thankfully things are much better and here I am doing what I love - nonstop banter with you all.
Monsoon = comfort food , sick days in  = comfort food and that's what I have been doing this entire while (in my defence)
So here goes an easy veg cutlet recipe to cheer one up instantly. Its healthy too (if you don't count the cheese). I had this at one of my friends place and loved it and came up with some tweaks here and there.




Vegetable Cutlets

Adjust the vegetables according to preference and taste.

1/2 cup finely chopped capsicum
1/2 cup finely grated carrot
1 cup green peas
1/2 cup paneer grated
1/2 cup cheese grated
2 big potatoes boiled and smashed
1 small onion finely chopped
1/2 cup cabbage finely chopped
1/2 cup French beans finely chopped
salt
pepper
2 tspn ginger garlic paste
paprika (optional)
bread crumbs to coat
oil for frying
flour paste




Method

Mix all ingredients and seasoning together and mash properly.
You can mix a small quantity of bread or bread crumbs to hold the consistency.
Once the mixture is ready make small patties and dip them in the flour paste (optional) and then coat them with bread crumbs.
Deep fry or shallow fry according to your choice.
Enjoy piping hot with your choice of dip.
Excellent starter for get together and parties.

Corn and Green Peas Masala

I love corn and Green peas like crazy.
So here goes a dish which has both. 
Now that's what I call party for your tastebuds. 
Knowing me the recipe has to be simple and easy. 

So check it out and cook it away in a jiffy. 

Ingredients 
1 medium onion finely chopped
1 medium tomato finely chopped
1 tspn giner garlic paste 
1 tbspn oil 
1/2 cup corn 
1/2 cup green peas 
1 tspn red chilly powder 
1 tspn turmeric 
1 tspn coriander powder 
1 tspn garam masala 
Cumin seeds
Pinch of asofoetida 
Salt as per taste 
1/2 cup coconut paste 
1/2 cup whipped yogurt 
Dried fenugreek leaves 

Method 
In a pan, heat oil, let cumin seeds crackle, add asofoetida, add onion and sauté it till translucent, add ginger garlic paste, green peas, corn and sauté. 
Add tomatoes and sauté till they are soft.

I can just eat it like this, yum isn't it? 


Add all the masalas and salt and let it sauté, then add the coconut paste and sauté for sometime, add yogurt and let it simmer for 2-3 minutes. 







Tada !! Doesn't it look really delicious . 
Serve with hot Rotis or Rice.
